Smoked bacon
150–200 g
Leek
1 piece
Potato
3 pieces
Ground black pepper

Preparation

Cut the bacon into small pieces, the light part of the leek into quarters of rings. Grate the potatoes on a coarse grater.

Beat the eggs with a whisk or fork with salt and pepper.

Place the bacon in the pan and, stirring, fry until golden brown. Transfer to a plate.

Fry leeks in bacon fat until soft. Add the potatoes and, stirring, cook everything together for another 5-8 minutes.

Return the bacon to the pan. Stir in potatoes and leeks, add salt and pepper.

Fill everything with eggs. Cover with a lid and leave on low heat for about 10-15 minutes.
