Preparation

Preheat oven to 200°C. Line a baking dish with foil.

Toast the pine nuts in a dry frying pan. Grind them in a blender along with basil, parsley, peeled garlic and cheese.

Gradually add olive oil and blend again. You should get a thick sauce. Season with salt and pepper.
If desired, you can use store-bought pesto.

Cut the salmon fillet into two pieces. Sprinkle them with salt and pepper. Place on foil. Top with sauce. Sprinkle with lemon juice.

Place cherry tomatoes, thyme and chopped onion next to the fish. Cover with foil. Bake for about 20 minutes.
