Red cabbage

Boil the eggs hard for 10 minutes. Cool and peel.

Peel and finely chop the beets. Chop the cabbage. Remove spinach stems.

Pour 350 ml of water into three pans. Stir turmeric into one, beets into the second, and spinach into the third. In a separate saucepan, combine cabbage and remaining liquid.

Puree the spinach with water and ½ teaspoon salt until smooth using a blender. Add more liquid if necessary.

Boil water with turmeric over low heat for 10 minutes, and with beets and cabbage for 20 minutes.

Add 1 tablespoon of vinegar to the pots with turmeric and beets, and soda to the cabbage. Strain and stir ½ teaspoon salt into each liquid.

Cut the eggs in half and remove the yolks. Place the whites in bowls of water of the desired color. Leave for 1-2 hours.

Mix the yolks with mayonnaise, lemon juice and mustard. Add some salt. Fill the colored egg whites with the filling.
