Ingredients

Oat flour

110 g

Butter or coconut oil

60 g

Freshly squeezed lemon juice

160 ml

Lemon zest

2 tbsp. spoons

Can add

Sweetener in powder form with sweetness 1:1

taste

Preparation

  1. 1.

    Preheat oven to 180°C. Line a 20cm square baking pan completely with parchment.

  2. 2․

    Grind 90 g of flour, cold butter and 45 g of erythritol into crumbs. Place on the bottom of the mold and compact.

  3. 3․

    Prick the base with a fork and bake for about 15 minutes until golden brown.

  4. 4.

    Whisk the eggs, lemon juice, zest, 20 g flour and 190 g erythritol.

  5. 5.

    Pour the lemon mixture over the hot base. Bake for about 35 minutes until the filling has thickened.

  6. 6․

    Cool to room temperature and then refrigerate for 3 hours. Cut into small squares.

    Sprinkle with powdered sweetener if desired.
